Celebrate Canada Cauliflower Pizza | Ep. 20 | Cooking in the Community Kitchen

Join Judy and Lucy for the 20th episode of Cooking in the Community Kitchen. Lucy is a member of Community Kitchen's staff and runs a few of our amazing programs. Today, we highlight Tummy Tamers! A program that aims to feed kids. During the last couple of years, we have had to alter the way we get food and snacks to kids, and families, in need. There has also been increased demand from families who could no longer rely on school meal programs. In possible, please consider donating to our summer programs or becoming a volunteer.Community Kitchen is a non-profit organization that focuses on education and nutrition. Each month, there will be a new video that teaches people a simple recipe with a featured ingredient from the Good Food Box.

Ingredients

Cauliflower Pizza

Crust

  • 1 Head cauliflower chopped fine

  • 2 large eggs

  • 1/2 cup shredded mozzarella cheese

  • 2 Tbls. grated fresh or dried parmesan cheese

  • 1-2 Tbls Olive oil

  • 1 Tbls Dried italian seasoning

Toppings

  • 1/2 cup pizza sauce

  • 1 cup shredded mozzarella cheese

Additional add-ons: Mini pepperoni, olives, tomatoes, pineapple, ham, hamburger meat, peppers, onions, mushrooms, roasted garlic.

Preparation

Celebrate Canada Cauliflower Pizza

Preheat oven to 425 degrees F. Line a baking with parchment paper.

To make the cauliflower crust, add caulifower to bowl of a food processor. Pulse and finely grind. Depening on the size of the cauliflower this will yeild 2-4 cups. If your cauliflower is large, double the ingredients and make 2 pizzas. If you do not have a food processors, a box grater will work just fine.

Transfer the ground cauliflower to a microwave safe bowl. Cover loosely, and cook for 4-5 minutes. Drain, cool. Stir in eggs, mozzarella, parmesan cheese and italian dried seasoning.

Spead cauliflower mixture onto the making sheet. Lightly brush a layer of olive oil. Bake 12-15 minutes. Flip the curst over at 10 minutes. Continue baking until golden brown.

Top with pizza sauce and your favourite toppings. Cover with mozzarella cheese and bake until cheese is melted and golden.
