Chocolate Peanut Butter Pie I Ep. 52 I Cooking in the Community Kitchen

Ingredients

CRUST:

  • 1 1/2 cups chocolate cookie crumbs

  • 1/4 cup melted butter

    *Options: Buy a pre-made 9” pie crust or you can do 8-10 x 125ml jars instead of the pie crust.

    FILLING:

  • 1 cup creamy peanut butter - room temperature

  • 8 ounces cream cheese - room  temperature

  • 1 cup whipped cream - whipped. *Option: cool whip instead of whipped cream.

  • 1 Tbsp. Cocoa powder (Fry's)

  • 1/2-1 cup sugar - taste and adjust

  • 1 Tbsp. vanilla

    GARNISH:

  • Hot fudge topping

  • Peanuts

Preparation

Mix together chocolate cookie crumbs and melted butter. 

Press firmly and evenly into a 9" pie plate.

Ensure  the bottom and sides are covered. 

Bake for 10 minutes in a 400 degree oven.  Cool before filling. 

Cream together, peanut butter, melted butter, softened cream cheese, cocoa powder, vanilla and 1/2 of the sugar.

Use the other 1/2 sugar to add to the whipping cream. Fold in the whipped cream. 

Pour the mixture into the chilled pie shell.  Chill for several hours. 

Serve with the hot fudge topping and garnish with the chopped or whole peanuts.  This pie also freezes well.
