Chicken Fajitas | Ep. 9 | Cooking in the Community Kitchen

Join Judy and TJ for the ninth episode of Cooking in the Community Kitchen. Together, they prepare some tasty Chicken Fajitas and have a great conversation on the importance of food education. Ingredients

Chicken Fajitas

  • 2 pounds boneless chicken breast or thighs

  • Juice of 2 limes

  • 1/4 cup minced cilantro

  • 2 - 4 Tbsp. fajitas seasoning mix (see below)

  • Olive oil

  • Orange, yellow, and red pepper thinly sliced

  • 1 - 2 Onions sliced

Toppings

  • Sour cream, diced tomatoes, diced olives, shredded cheese, chopped cilantro, salsa and chips

Fajitas Seasoning Mix

  • 4 tsp. Chilli powder

  • 2 tsp. ground Cumin

  • 2 tsp. Paprika (Smokey or Sweet)

  • 2 tsp. Sugar

  • 1 tsp. Garlic powder

  • 1 tsp. Onion powder

  • 1/2 tsp. Cayenne pepper (to taste)

  • 1 1/2 tsp. Salt (to taste)

Mix together, this mix can be stored in an airtight container for several months.

In a plastic bag, add 2 pounds of boneless chicken breasts or thighs, chopped into bite-sized pieces

Add lime juice, 1/4 cup of fresh chopped cilantro. Top with 2 Tbsp seasoning mix and marinate for one hour.

Remove from refrigerator about 20 minutes before cooking. In a large skillet or wok, over medium-high heat, add 2 Tbsp olive oil. Add chicken and cook until crispy and brown on one side, flip and cook on the other side. Remove chicken from pan. Cover (foil) and let rest.

Add onion, peppers, celery, and 1 Tbsp. Fajitas seasoning mix. Add the chicken back in, toss, taste and adjust seasoning and salt

Add mixture into the tortilla wrap, fold and roll. Top with desired toppings and serve with chips and salsa.
