French Toast Casserole | Ep. 8 | Cooking in the Community Kitchen

Join Judy and Lynn for the eighth episode of Cooking in the Community Kitchen. Together, they prepare a yummy French Toast Casserole and discuss a local resource centre that helps countless Calgarians! Community Kitchen is a non-profit organization that focuses on education and nutrition. Each month, there will be a new video that teaches people a simple recipe with a featured ingredient from the Good Food Box.

Ingredients

French Toast Casserole

  • 12 slices of day-old bread - cut into 1” cubes

  • 2 to 8 ounces pkg. cream cheese - cut into 1” cubes

  • 1 to 2 cups blueberries

  • 12 eggs - beaten

  • 2 cups whole milk or 10% cream

  • 1 tsp. vanilla extract

  • 1/3 cup maple syrup

  • 1/2 tsp. salt

Blueberry Topping

  • 1 1/2 cup white sugar

  • 4 Tbsp. cornstarch

  • 2 cups water

  • 2 cups fresh blueberries

Optional: Whip cream

Wash and dry all fruit before consuming

French Toast Casserole

Preheat oven to 325 degrees and lightly grease a 9 x 13 baking dish.

Arrange half of the bread cubes in the dish and top with cream cheese cubes. Sprinkle with 1 to 2 cups blueberries and top with remaining bread cubes.

Mix eggs, milk or cream, vanilla extract and syrup in a large bowl.

Pour over bread and berry mixture, cover and refrigerate overnight.

Remove from fridge 30 minutes before baking, cover with foil and bake for 30 minutes. Uncover, and continue baking for 25 to 30 minutes, until the center is firm,

Blueberry Topping

Mix sugar, cornstarch, and water in a saucepan bring to a boil - stir constantly.

Mix in berries, reduce heat, and simmer for 7 to 10 minutes until the berries are soft.

Serve over casserole and top with whipped cream.
