Greek Salad | Ep. 7 | Cooking in the Community Kitchen

Join Judy for a flavourful conversation and some smart tips for how to create the most delicious Greek Salad. This summer salad is the perfect go-to meal for lunch or dinner! Community Kitchen is a non-profit organization that focuses on education and nutrition. Each month, a new video teaches people a simple recipe with featured ingredients from the Good Food Box.

Ingredients

Greek Salad

  • Red, Orange and Yellow Peppers sliced

  • 2 Large Tomatoes cut into wedges

  • 1 Medium Cucumber

  • 1 Small Red Onion

  • 1/4 cup Kalamata or Greek-style Olives

  • 1/2 cup Crumbled Feta Cheese

Optional: Pasta, Couscous, Quinoa and Salt & Pepper to taste

Greek Salad Dressing

  • 1/2 cup Olive Oil

  • 1/4 cup Red Wine Vinegar

  • Juice of one Lemon

  • 3 Minced Cloves of Garlic

  • 1/2 tsp. Dried Basil

  • 1 tsp. Dried Oregano Leaves

  • 1/2 tsp. Marjoram or Italian seasoning

  • 1/2 cup Crumbled Feta Cheese

Optional: 2 Tbsp. Plain Greek Yogurt

Wash and dry all fruits and vegetables before consuming

Preparation

Crisp Greek Salad

Chop peppers, cucumber and tomatoes. Slice the red onion finely and add all ingredients to a large serving bowl.

Optional - Add cooked pasta, couscous or quinoa

Whisk dressing together (better made the day before to allow flavours to come together). Refrigerate dressing and toss with salad ingredients just before serving.
