Join Judy and Lisa Moore for the sweetest episode of Cooking in the Community Kitchen, together they prepare Lisa’s (no-bake) orange creamsicle cheesecake! Lisa has been a volunteer with Community Kitchen for 9 years. It has become a tradition with her entire family who comes at least once a month to volunteer with the Good Food Box program. Ingredients
Lisa’s (no-bake) Orange Creamsicle Cheesecake
Crust
1 cup graham cracker or oreo cookie crumbs
4 Tbsp. melted butter (1/4 cup)
Filling
1 small box orange jello - 4 servings
2/3 cup boiling water
4 - 250 grams cream cheese (room temperature)
2/3 cup icing sugar
zest of one large orange
2 cups whipping cream & 1/3 cup icing sugar
Preparation
Lisa's (no-bake) Orange Creamsicle Cheesecake
Combine the graham cracker or Oreo crumbs with the melted butter in a bowl. Press into the bottom of a 9” springform pan. Chill or freeze the crust until ready to use.
Add the orange Jello powder to the boiling water. Stir until dissolved. Set aside for five minutes to cool.
Whip the cream cheese and the 2/3 cup icing sugar until well combined. Add the Jello and orange zest. Add the whipping cream with the 1/3 cup icing sugar.
Mix until well incorporated. Taste and add orange extracts as needed. Freeze for 12-18 hours
