Pan-Fried Onion Dip and Alison & Leon’s Cheese and Bacon Potato Skins | Ep. 13 | Cooking in the Community Kitchen

Ingredients

Alison & Leon’s Cheese and Bacon Potato Skins

  • 2lbs (8-10) medium potatoes - scrubbed and clean

  • 1/2 to 1 cup cooked chopped bacon

  • 1 1/2 cups grated cheese

    • Ex. cheddar, monterey jack, gruyere, jalapeno jack

  • salt and pepper

  • sour cream and sliced green onions to serve

  • chopped jalapeno pepper and minced garlic (optional)

Pan-Fried Onion Dip

  • 2 large yellow onions

  • 2 Tbsp butter

  • 1/4 cup vegetable oil

  • 1/4 tsp. ground cayenne pepper

  • 1 tsp. kosher salt

  • 1/2 tsp. freshly ground pepper

  • 4 ounces room temp. cream cheese

  • 1/2 cup sour cream

  • 1/2 cup good mayonnaise

  • 1/4 cup honey (optional)

  • ( We suggest washing all fruits and vegetables before consuming)

Alison & Leon’s Cheese and Bacon Potato Skins

Start by pricking each potato 4 times and placing them on the outer edge of the microwave turntable. Microwave on high for 6 to 8 minutes. Turn the potatoes over and microwave on high for an additional 6 to 8 minutes

Use a sharp knife and cut the potatoes in half. Use a scoop to leave behind a thin skin and a small amount of potato. Brush with bacon drippings. Place on parchment paper on baking sheet. Salt and pepper the skins and add chopped bacon and cheese. Bake at 400 degrees for about 7 to 10 minutes or until cheese melts and browns. Serve with sour cream and green onions.

Pan-Fried Onion Dip

Cut the onions in half and give them a rough chop. You will have about 3 cups of onions. Heat the butter and oil in a large frying pan on medium heat. Add the onions, salt, pepper, and cayenne then saute for 10 minutes. Reduce to medium-low, add honey and cook stirring occasionally for 20 more minutes until onions brown and caramelized.

Allow onions to cool. Place sour cream, cream cheese and mayonnaise in the bowl. With an electric mixer, beat until the mixture is smooth. Add onions and mix again. Taste and adjust seasoning as needed.
