Sweet Potato Casserole | Ep. 1 | Cooking In The Community Kitchen

Ingredients

  • 4 Cups of cooked and mashed sweet potatos

  • 2Tbsp of cream or milk

  • 1 tsp. of salt

  • 1/4 tst. of paprika

  • 1/2 cup of butter

  • 1/3 cup of brown sugar packed into cup

  • 1/3 cup of butter

Optional

  • 1 cup of pecan halves

  • 1/2 cup of chopped maraschino cherries

Preparation

Thoroughly mix potatoes, cream, salt, and paprika. Spread into greased casserole dish.

Make the topping by heading the brown sugar and butter over low heat, stirring constantly, until butter is barely melted. (It’s important not to cook after the butter is melted, or the topping will harden when the casserole is heated.)

Spread the topping over the sweet potatoes, cover with pecan halves.

Refrigerate until ready to heat. This casserole may be warmed in the oven at 350 degrees until bubbling hot before serving.

Garnish with maraschino cherries.
